Recipe for Mama's Caramel Refrigerator Cookies (she usually doubled this recipe!)
1/2 cup oleo (or butter) mama always used oleo--butter makes a softer cookie
1 cup packed brown sugar
1/2 tsp vanilla
1 and 3/4 cups flour
1/4 tsp salt
1/2 tsp soda
Mix first 4 ingredients together. Mix rest of ingredients together and blend with the first. Roll dough into a long roll. Wrap with wax paper. Refrigerate or freeze. Cut roll into 1/8" slices. Bake at 350 for 8-10 minutes on an ungreased cookie sheet.
When drying, place cookies on a rack--and don't layer them until they are completely cool--this keeps them crisp.
